Preparation and Cooking

    Make the Mafaldine

    Cook the mafaldine pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chanterelles and cook for about 5-7 minutes until they are golden and tender. Add the wax beans and sauté for an additional 3-4 minutes until they are bright in color and tender. Season with salt and pepper to taste.

    Prepare the Pesto

    In a food processor, combine arugula, almonds, garlic, lemon juice, and olive oil. Blend until smooth, adding water as needed to reach the desired consistency. Season with salt and pepper to taste.

    Combine Ingredients

    Add the cooked mafaldine to the skillet with the chanterelles and wax beans. Pour in the arugula-almond pesto, and toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency. Grate the Parmesan cheese over the top and mix well.

    Serve

    Plate the mafaldine, garnishing with extra Parmesan cheese and a drizzle of olive oil if desired. Enjoy!
