    Prepare the Ingredients

    Peel and chop the carrots, onion, ginger, and garlic.

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they become translucent (about 5 minutes).

    Add Carrots and Ginger

    Add the chopped carrots and ginger to the pot, stirring well. Cook for another 5 minutes.

    Add Broth

    Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 20 minutes, or until the carrots are tender.

    Blend the Soup

    Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a regular blender.

    Season and Serve

    Season with salt and black pepper to taste. Serve hot, topped with a dollop of creme fraiche and a sprinkle of chopped pistachios.
