    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them rest at room temperature for about 30-45 minutes before cooking.

    Season the Steak

    Rub both sides of each steak with olive oil, then season generously with salt and black pepper.

    Cook the Steak

    Heat a cast-iron skillet or grill over high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

    Add Aromatics

    In the last 2 minutes of cooking, add crushed garlic cloves and fresh rosemary to the skillet for added flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate covered loosely with foil for about 5-10 minutes before serving.

    Peel and Chop Potatoes

    Peel the potatoes and cut them into evenly sized chunks (about 1-2 inches).

    Boil Potatoes

    Place the chopped potatoes in a large pot, cover with cold water, and bring to a boil. Add salt and cook until fork-tender, about 15-20 minutes.

    Prepare Garlic

    During the last 5 minutes of boiling, add the garlic cloves to the pot with the potatoes.

    Drain and Mash

    Once the potatoes and garlic are tender, drain them and return to the pot. Mash using a potato masher until smooth.

    Add Butter and Cream

    Mix in butter and heavy cream until well combined. Season with salt and black pepper to taste.
