Preparing the Fish

Make the Batter
In a large mixing bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add cold sparkling water while stirring until the batter is smooth and thick.

Heat the Oil
In a deep frying pan or a deep fryer, heat oil to 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it's fully coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Cut the Potatoes
Peel the potatoes and cut them into thick fries.

Preheat the Oil
In a separate pot, heat the oil to 350°F (175°C).

Fry the Chips
Carefully add the cut potatoes to the hot oil in batches. Fry for about 5-6 minutes until they are tender but not browned. Remove and drain on paper towels.

Final Fry
Increase the oil temperature to 375°F (190°C). Fry the chips again for an additional 2-3 minutes until golden and crispy. Drain and season with salt.

Mix the Ingredients
In a bowl, combine mayonnaise, finely chopped dill pickles, capers, and lemon juice. Season with salt and black pepper to taste. Stir until well combined.
