Preparation

    Prepare the Salmon

    Preheat your grill to medium-high heat. Pat the salmon fillets dry with paper towels. Rub each fillet with olive oil, and season both sides with salt and black pepper.

    Prepare the Vegetables

    Wash and cut the zucchini into half-moons, slice the bell pepper into strips, and trim the ends of the asparagus. Toss all the vegetables with a little olive oil, salt, and pepper.

    Make the Lemon Butter Sauce

    In a small saucepan over medium heat, melt the butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice and chopped parsley. Remove from heat and set aside.

Cooking

    Grill the Salmon

    Place the seasoned salmon fillets on the preheated grill. Grill for 4-5 minutes on each side, or until the salmon flakes easily with a fork and has nice grill marks.

    Grill the Vegetables

    Add the prepared vegetables to the grill alongside the salmon. Grill for about 6-8 minutes or until tender, turning occasionally.

    Serve

    Once the salmon and vegetables are cooked, plate them together. Drizzle the lemon butter sauce over the salmon and vegetables. Garnish with additional parsley if desired.
