Preparation

  1. 1

    Prep the Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with 2 tablespoons of butter and dust them with cocoa powder. Set aside.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine 1 cup of butter and 8 ounces of semi-sweet chocolate. Stir until melted and smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together 1 cup of flour, 1 cup of sugar, 1 tablespoon of cocoa powder, 1 teaspoon of salt, and 1 teaspoon of baking powder until well combined.

  4. 4

    Combine Mixtures

Once the chocolate mixture has cooled slightly, add 2 large eggs and 2 teaspoons of vanilla extract. Whisk until well combined. Gradually add the dry ingredients to the chocolate mixture, stirring until just combined.

Baking

  1. 5

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.

  2. 6

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, until the edges are firm but the center is still soft.

  3. 7

    Cool

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

Serving

  1. 8

    Inversion

Invert each ramekin onto a plate. Gently tap to release the cake.

  2. 9

    Add Toppings

Serve immediately with a scoop of vanilla ice cream and a handful of fresh berries.
