    Prepare the Steak

    Season the shell steak generously with salt and coarse black pepper on both sides. Press the pepper into the meat to ensure it adheres.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove the steak and let it rest.

    Make the Sauce

    In the same skillet, add butter and minced shallots. Sauté until shallots are translucent. Carefully add the brandy and scrape up any brown bits from the bottom of the pan. Allow the brandy to reduce for about 2-3 minutes.

    Finish the Sauce

    Add heavy cream to the skillet and stir to combine. Simmer for an additional 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt if necessary.

    Serve

    Slice the rested steak and serve it topped with the creamy pepper sauce.
