    Prepare the Meat

    Remove the Chateaubriand from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 375°F (190°C).

    Season the Meat

    Pat the Chateaubriand dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Meat

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the Chateaubriand and sear for about 3-4 minutes on each side until nicely browned.

    Add Aromatics

    Add the fresh thyme and crushed garlic cloves to the skillet with the Chateaubriand.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches your preferred doneness. Use a meat thermometer for accuracy.

    Once cooked, remove the Chateaubriand from the oven and let it rest for 10-15 minutes before slicing.
