Dover Sole Meuniere Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Fish

Season the Dover sole fillets with salt and black pepper on both sides. Dredge each fillet in all-purpose flour, shaking off any excess.

  2. 2

    Heat the Butter

In a large skillet, melt 4 tablespoons of unsalted butter over medium heat until it is foamy and begins to brown slightly.

  3. 3

    Cook the Fillets

Add the dredged Dover sole fillets to the skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and keep warm.

  4. 4

    Prepare the Sauce

In the same skillet, add the remaining 4 tablespoons of butter and allow it to brown slightly. Remove from heat and stir in fresh lemon juice and chopped parsley.

  5. 5

    Serve

Pour the brown butter sauce over the cooked Dover sole fillets and serve immediately at the table.
