    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Clean the jewel potatoes and cut them into halves or quarters, depending on their size.

    Cook the Lardons

    In a skillet over medium heat, cook the lardon until crispy. Remove from the skillet and set aside, leaving the rendered fat in the skillet.

    Caramelize the Onions

    Add the sliced onion to the skillet with the duck fat. Cook over low heat, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.

    Combine Ingredients

    In a large bowl, combine the roasted potatoes, crispy lardons, and caramelized onions. Season with salt, black pepper, and thyme (if using).

    Spread the mixture on a baking sheet in a single layer. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, turning halfway through.
