Form the Burger Patties
In a bowl, combine ground prime Angus beef with salt and black pepper. Form into two patties.

Cook the Burger Patties
Heat a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until desired doneness. In the last minute of cooking, place the Point Reyes bleu cheese on top of the patties to melt.

Prepare Pommes Frites
Deep fry or bake the pommes frites according to package instructions until crispy and golden.

Assemble the Burger
Toast the burger buns lightly. Spread duck fat aioli on the bottom bun, place the cooked patty with melted bleu cheese, add slow cooked onions, and top with the other half of the bun.

Serve
Serve the Prime Angus Burger with a side of crispy pommes frites.
