Prepare the Mixture
In a large mixing bowl, combine the ground veal, diced pork belly, grated Gruyère cheese, chopped parsley, minced garlic, egg, bread crumbs, salt, and black pepper. Mix until well combined.

Form the Meatballs
Shape the mixture into small balls about the size of a golf ball and set them aside on a plate.

Cook the Boulettes
In a large skillet, heat the olive oil over medium heat. Add the meatballs in batches, cooking for about 5-7 minutes on each side until they are golden brown and cooked through. Remove them and set aside.

Prepare the Sauce
In the same skillet, pour in the demi-glace sauce and bring it to a simmer. Allow it to reduce slightly for about 5 minutes.

Combine and Serve
Return the cooked boulettes to the skillet and gently coat them in the sauce. Serve warm with your choice of side dish.
