    Prepare the Filling

    In a large bowl, combine the ground lamb, chopped shallots, cilantro, garlic, ginger, soy sauce, and sesame oil. Mix well until all ingredients are fully incorporated.

    Fill the Dumplings

    Take a dumpling wrapper and place about 1 tablespoon of the lamb filling in the center. Moisten the edges of the wrapper with water, fold it over, and pinch to seal. Repeat until all filling is used.

    Cook the Dumplings

    In a large skillet, heat vegetable oil over medium heat. Place the dumplings in the skillet, ensuring they are not touching. Cook for about 2-3 minutes until the bottoms are golden brown.

    Steam the Dumplings

    Add 1 cup of water to the skillet, cover immediately, and steam the dumplings for about 5-7 minutes until cooked through.

    Serve

    Remove the lid and let the dumplings cook for another minute until the water evaporates. Serve hot with a dipping sauce made from sherry vinegar, soy sauce, and additional chopped cilantro.
