Brussels Sprouts with Lardon and Gruyère

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half lengthwise.

Cook the Lardon
In a large skillet, heat the olive oil over medium heat. Add the lardon and cook until crispy, about 5-7 minutes. Remove the lardon from the skillet and set aside, leaving the rendered fat in the skillet.

Sauté the Brussels Sprouts
In the same skillet, add the Brussels sprouts cut side down. Season with salt and black pepper. Cook for about 5 minutes until they start to brown.

Add Mustard Seeds
Sprinkle the mustard seeds over the Brussels sprouts and stir to combine. Continue cooking for another 5-7 minutes until they are tender and caramelized.

Combine Ingredients
Return the cooked lardon to the skillet with the Brussels sprouts. Stir in the grated Gruyère cheese and let it melt slightly before removing from heat.

Serve
Transfer the Brussels sprouts to a serving dish and enjoy warm.
