    Prepare the Ingredients

    Thinly slice the A4 Wagyu beef against the grain. Grate the fresh wasabi and set aside. Clean the enoki mushrooms and trim the ends. Thinly slice the black garlic.

    Sear the Wagyu

    Heat a skillet over high heat. Sear the Wagyu slices for about 1-2 minutes on each side until browned, but still rare in the center. Remove from the skillet and let rest.

    Sauté the Enoki Mushrooms

    In the same skillet, add a little oil if necessary and sauté the enoki mushrooms until just tender, about 2-3 minutes. Season lightly with salt.

    Plating

    On a serving plate, arrange the arugula as a bed. Top with the seared Wagyu slices, sautéed enoki mushrooms, and slices of black garlic. Drizzle with shoyu and garnish with freshly grated wasabi and shaved winter black truffle.
