Burger Patty

    Prepare the Quinoa

    Rinse 1/2 cup of quinoa under cold water. In a saucepan, combine rinsed quinoa with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.

    Mash the Beans

    In a large bowl, mash 1 cup of cooked black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the cooled quinoa, 1/2 cup diced bell pepper, 1/4 cup chopped onion, 2 tsp minced garlic, 1 tsp ground cumin, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper to the mashed beans. Mix well.

    Form Patties

    Stir in 1/4 cup of flour to bind the mixture, then divide the mixture into 2 equal portions and form into patties.

    Cook the Patties

    Heat 2 tbsp of olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, until golden brown.

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Toss 2 medium potatoes cut into wedges with 2 tbsp of olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp paprika in a large bowl.

    Bake the Fries

    Spread the seasoned potato wedges on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Assemble Burger

    Prepare the Buns

    Toast the burger buns lightly if desired.

    Assemble the Burger

    Layer lettuce, the cooked veggie patty, sliced tomato, and sliced avocado on the bottom half of each bun. Add ketchup and mustard to taste, then cover with the top half of the bun.
