Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook Spaghetti
Add 400g of spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta water. Then drain the spaghetti and set aside.
Preparing Sauce

Cook Pancetta
In a large skillet over medium heat, add 150g of pancetta. Cook until crispy, about 5-7 minutes.

Mix Eggs and Cheese
In a bowl, whisk together 3 large eggs, 100g of grated Parmesan cheese, and 1 tsp of black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Once the pancetta is crispy, reduce the heat to low and add the drained spaghetti to the skillet. Toss to combine.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season with salt to taste and additional black pepper if desired.
Serving

Garnish and Serve
Plate the spaghetti carbonara, garnish with chopped fresh parsley, and serve immediately.
