Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Dates
Using a sharp knife, make a lengthwise slit in each Medjool date and remove the pit. Be careful not to cut all the way through.

Stuff the Dates
Take about 7 grams of goat cheese and stuff it into each date, pressing gently to seal.

Wrap with Bacon
Cut each slice of bacon in half. Wrap one half of bacon around each stuffed date, securing it with a toothpick if necessary.
Cooking

Arrange on Baking Sheet
Place the bacon-wrapped dates on a baking sheet lined with parchment paper, ensuring they are spaced apart.

Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and golden brown, flipping halfway through for even cooking.

Optional Glaze
If desired, drizzle honey and sprinkle chopped fresh rosemary over the dates during the last 5 minutes of baking for added flavor.
