Shrimp Preparation

    Prepare the Poaching Liquid

    In a large pot, bring the water to a boil. Add the lemon halves and Old Bay seasoning.

    Poach the Shrimp

    Once the water is boiling, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Do not overcook.

    Chill the Shrimp

    Remove the shrimp from the pot and transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes.

    Drain and Refrigerate

    Drain the shrimp and pat them dry with a paper towel. Place the shrimp in the refrigerator to chill further until ready to serve.

Cocktail Sauce Preparation

    Mix the Sauce Ingredients

    In a medium bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir well to combine.

    Taste and Adjust

    Taste the cocktail sauce and adjust the seasoning by adding more horseradish or hot sauce to your liking.

Serving

    Arrange the chilled shrimp on a serving platter.
