Method

Grilling the Salmon

  1. 1

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 2

Pat the salmon fillets dry with a paper towel and brush both sides with olive oil.

  3. 3

Season the salmon fillets with salt and black pepper on both sides.

  4. 4

Place the salmon fillets on the grill, skin side down. Grill for about 5-6 minutes.

  5. 5

Carefully flip the salmon fillets and grill for an additional 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork.

Preparing Seasonal Vegetables

  1. 6

While the salmon is grilling, prepare the vegetables.

  2. 7

Trim the ends of the asparagus and cut the bell pepper and zucchini into slices.

  3. 8

In a bowl, toss the asparagus, bell pepper, zucchini, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.

  4. 9

Place the vegetables on the grill alongside the salmon and grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Making Lemon Butter Sauce

  1. 10

In a small saucepan over medium heat, melt the stick of unsalted butter.

  2. 11

Add minced garlic and sauté for about 1 minute until fragrant.

  3. 12

Stir in lemon juice and chopped parsley. Cook for an additional minute, then remove from heat.

  4. 13

Drizzle the lemon butter sauce over the grilled salmon and vegetables before serving.
