Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips (about 1/4 inch) to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Dry the Fries

    Drain the soaked fries and pat them dry with a clean kitchen towel to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer for accuracy.

    Fry the Fries

    Add the dried fries in batches to the hot oil and fry for 5-7 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.
