Cake Preparation

  1. 1

    Preheat Oven

Preheat your oven to 220°C (425°F). Grease four ramekins with butter and dust them with flour, tapping out any excess flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar and eggs until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add the vanilla extract, flour, and salt, and mix until just combined. Do not overmix.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about ¾ full. Place the ramekins on a baking sheet.

  6. 6

    Bake

Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set.

  7. 7

    Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

  8. 8

    Serve

Carefully invert each ramekin onto a plate, allowing the cake to release. Serve immediately with a scoop of vanilla ice cream and a dusting of powdered sugar on top.
