Flatbread Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Stir gently and let sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the frothy yeast mixture and 2 tablespoons of olive oil. Mix until a dough starts to form.

Knead Dough
Transfer dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C) during the last 15 minutes of the dough rising.
Assembling Flatbread

Prepare the Flatbread
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll out the dough into a large rectangle or circle about 1/4 inch thick.

Add Toppings
Transfer the rolled-out dough onto a baking sheet. Evenly sprinkle the diced Jersey tomatoes, minced garlic, roasted red pepper, and fresh basil over the surface.

Season and Drizzle
Sprinkle fresh rosemary, salt, and pepper over the toppings. Drizzle with 2 tablespoons of olive oil.

Bake
Place the flatbread in the preheated oven and bake for about 12-15 minutes, or until the edges are golden brown and crispy.

Remove the flatbread from the oven, let it cool slightly, slice, and serve warm.
