Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Combine Dry Ingredients

In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Mix Wet Ingredients

In another bowl, mix together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until well combined.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

  5. 5

    Bake the Cakes

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cakes

Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, remove from pans and cool completely on a wire rack.

Cream Cheese Frosting Preparation

  1. 7

    Prepare the Frosting

In a mixing bowl, beat the cream cheese and unsalted butter together until smooth and creamy.

  2. 8

    Add Flavor and Sweetness

Mix in the vanilla extract and gradually add the powdered sugar, beating until the frosting is light and fluffy.

Assembling the Cake

  1. 9

    Frost the First Layer

Place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting on top.

  2. 10

    Add the Second Layer

Carefully place the second cake layer on top of the frosted layer and press down gently.

  3. 11

    Frost the Entire Cake

Spread cream cheese frosting over the top and sides of the cake until fully covered.

  4. 12

    Decorate (optional)

Top with fresh raspberries and chocolate shavings if desired.
