Salad Preparation

Wash the Greens
Rinse the mesclun mixed lettuce under cold running water to remove any dirt or debris. Shake off excess water and place the lettuce in a large salad bowl.

Prepare the Carrots
Peel the carrot and grate it using a box grater or a food processor. Add the grated carrot to the bowl with the lettuce.

Slice the Cucumbers
Wash the cucumber and slice it into thin rounds. Add the cucumber slices to the salad bowl.

Prepare the Radish
Trim the ends of the radishes and slice them thinly. Add the radish slices to the salad bowl.

Halve the Tomatoes
Rinse the baby heirloom tomatoes and cut them in half. Add the halved tomatoes to the salad bowl.
Vinaigrette Preparation

Mix the Ingredients
In a small bowl, whisk together the fresh lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
