Olives

    Prepare the Olives

    In a small bowl, combine the mixed olives with olive oil and fresh herbs. Toss gently to coat.

Hummus

    Make the Hummus

    In a food processor, combine the canned chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water. Blend until smooth, adjusting the consistency with additional water if necessary.

Baba Ghanoush

    Roast the Eggplant

    Preheat your oven to 400°F (200°C). Prick the eggplant with a fork and place it on a baking sheet. Roast for 30-40 minutes until the skin is charred and the flesh is soft.

    Prepare the Baba Ghanoush

    Once the eggplant is cool enough to handle, scoop the flesh into a food processor. Add tahini, minced garlic, lemon juice, olive oil, salt, and smoked paprika. Blend until smooth.

Vegetables

    Prepare the Vegetables

    Wash and cut the carrots into sticks, slice the cucumber, and slice the bell peppers. Arrange the vegetables on a serving platter alongside the olives, hummus, and baba ghanoush.
