Prepare the Shrimp
In a large bowl, combine the shrimp with salt, black pepper, and cayenne pepper. Mix well and let it marinate for about 15 minutes.

Coat the Shrimp
Take each shrimp, dredge it in flour, dip it into the whisked eggs, and finally coat it with coconut flakes. Ensure each shrimp is evenly coated.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the coated shrimp to the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes on each side or until golden brown and crispy.

Drain Excess Oil
Using a slotted spoon, remove the cooked shrimp and place them on a plate lined with paper towels to drain excess oil.

In a small bowl, mix together the orange marmalade, diced pineapple, soy sauce, lime juice, and grated ginger until well combined.
