Chocolate Base

Whipping Cream

Garnish (optional)

Method

Preparation of Chocolate Base

  1. 1

    Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Whisk Together Eggs and Sugar

In a separate bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened, about 3-4 minutes.

  3. 3

    Combine Mixtures

Gradually fold the melted chocolate mixture into the egg and sugar mixture until well combined. Make sure not to deflate the mixture.

Whipping the Cream

  1. 4

    Whip the Heavy Cream

In a large mixing bowl, using an electric mixer, whip the heavy cream until soft peaks form. Be careful not to overwhip.

  2. 5

    Fold Cream into Chocolate Mixture

Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the whipped cream.

Setting the Marquise

  1. 6

    Transfer to Mold

Pour the chocolate mixture into a lined loaf pan or a mold of your choice. Smooth the top with a spatula.

  2. 7

    Chill

Cover the mold with plastic wrap and refrigerate for at least 4 hours, or until set.

Serving

  1. 8

    Unmold and Garnish

Once set, carefully unmold the marquise onto a serving platter. Dust with cocoa powder and garnish with fresh berries if desired.

  2. 9

    Slice and Serve

Slice the marquise into thick pieces and serve chilled. Enjoy!
