For the Shrimp

    Prepare the Shrimp

    In a bowl, combine the shrimp, curry powder, lime juice, salt, and black pepper. Toss to coat the shrimp evenly and let marinate for about 15 minutes.

    Cook the Shrimp

    In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.

    Add Coconut Milk

    Pour in the coconut milk and stir to combine with the garlic and ginger. Bring the mixture to a simmer.

    Finish the Shrimp

    Add the marinated shrimp to the skillet and cook for 5-7 minutes, or until the shrimp are pink and opaque. Adjust seasoning if necessary.

    Garnish

    Remove from heat and garnish with chopped fresh cilantro before serving.

For the Jasmine Rice

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium pot, combine rinsed rice, water, and salt. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 15 minutes or until the water is absorbed and the rice is tender.

    Fluff the Rice

    Remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
