Main Ingredients

Parsnip Puree

Red Bliss Potatoes

Method

Steak Preparation

  1. 1

    Prepare the Ribeye Steak

Remove the ribeye steak from the refrigerator and let it rest at room temperature for about 30 minutes before cooking.

  2. 2

    Season the Steak

Rub the steak with olive oil, then season generously with salt and black pepper on both sides.

  3. 3

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Place the steak on the grill or skillet and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (130-135°F for medium-rare).

  4. 4

    Rest the Steak

Remove the steak from the heat and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Parsnip Puree Preparation

  1. 5

    Prepare the Parsnips

Peel and chop the parsnips into small pieces. Place them in a pot and cover with water.

  2. 6

    Cook the Parsnips

Bring the water to a boil and cook the parsnips until soft, about 15-20 minutes.

  3. 7

    Make the Puree

Drain the parsnips and transfer them to a blender. Add the butter, heavy cream, salt, and pepper. Blend until smooth and creamy. Adjust seasoning as needed.

Red Bliss Potatoes Preparation

  1. 8

    Prepare the Potatoes

Scrub the red bliss potatoes under running water. Cut them in half or quarters, depending on their size.

  2. 9

    Boil the Potatoes

Place the potatoes in a pot, cover with water, and add salt. Bring to a boil and cook until tender, about 15-20 minutes.

  3. 10

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, salt, pepper, and chopped chives. Mash until creamy and well combined.
