    Prepare the Tartar Sauce

    In a bowl, combine mayonnaise, chopped dill pickles, lemon juice, salt, and black pepper. Mix well and set aside.

    Prepare the Slaw

    In a large bowl, mix together shredded cabbage, grated carrot, salt, and pepper. Toss well and set aside.

    Crust the Fish

    Preheat the oven to 375°F (190°C). Crush the potato chips into small pieces and place them in a shallow dish. Dip each fish fillet into the crushed potato chips, coating both sides well.

    Fry the Fish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the crusted fish fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

    Assemble the Dish

    On each plate, place a piece of fried fish, top with shredded cheddar cheese, a generous scoop of the slaw, and a side of tartar sauce. Optionally, serve with additional house-made pickles on the side.
