Prepare the Fries
Peel the potatoes and cut them into thick fries. Soak them in cold water for about 30 minutes, then drain and pat dry.

Heat the Beef Fat
In a deep pot or fryer, heat the beef fat over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Fry the potato pieces in the hot beef fat in batches until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt.

Make the Batter
In a mixing bowl, combine flour, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot beef fat. Fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Serve
Plate the fish and chips together. Serve with tartar sauce and lemon wedges on the side.
