Prepare the Fish
Rinse the fish fillets under cold water and pat dry with paper towels. Cut into sandwich-sized portions.

Make the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, whisking until smooth.

Heat the Oil
In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each piece of fish into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the Fish Mac
Toast the burger buns lightly. On the bottom half of each bun, place a lettuce leaf, followed by a piece of fried fish, a slice of tomato, a slice of American cheese, and then the top half of the bun.
