Prepare the Fish
Rinse the pollock fillets under cold water and pat them dry with paper towels.

Season the Fillets
In a small bowl, mix the olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this mixture over both sides of the pollock fillets.

Cook the Fish
Heat a non-stick skillet over medium heat. Once hot, add the seasoned pollock fillets, skin side down, and cook for 4-5 minutes.

Flip and Finish Cooking
Carefully flip the fillets and cook for another 3-4 minutes, or until the fish is cooked through and flakes easily with a fork.

Garnish and Serve
Remove the pollock from the skillet, sprinkle with fresh parsley, and serve immediately with lemon wedges on the side.
