Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Add salt.

Gradually whisk in the stone ground grits. Reduce the heat to low and cook, stirring occasionally, for about 20-25 minutes or until thickened.

Once thick, stir in the shredded cheddar cheese until melted and creamy. Set aside.

Cook the Sausage
In a large skillet over medium heat, add the sliced Conecuh sausage.

Cook for about 5-7 minutes, or until the sausage is browned and has released its oils.

Add the peeled and deveined shrimp to the skillet, and season with black pepper. Cook for about 3-4 minutes or until shrimp are pink and cooked through.

Prepare the Cream Reduction
Add the heavy cream to the skillet, stirring to combine. Let it simmer for 3-5 minutes until slightly thickened.

Finish with butter, lemon juice, and sliced green onions, stirring until the butter is melted.

Assemble the Dish
To serve, spoon the cheesy grits onto a plate and top with the shrimp and sausage mixture.

Drizzle with any remaining cream reduction and garnish with additional green onions, if desired.
