Preparation of Oysters

    Shucking the Oysters

    Carefully shuck each oyster using an oyster knife, retaining the liquor in the shell. Place the shucked oysters on a bed of salt in a cast-iron skillet.

    Sautéing Garlic

    In a small pan, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.

Preparing the Spinach Artichoke Mixture

    Cooking Spinach

    In a separate skillet, add the chopped spinach and cook over medium heat until wilted, about 3-4 minutes. Remove from heat.

    Mixing Ingredients

    In a mixing bowl, combine the cooked spinach, chopped artichoke hearts, softened cream cheese, half of the mozzarella cheese, half of the grated Parmesan, lemon juice, salt, and black pepper. Mix until well combined.

Assembling and Baking

    Filling the Oysters

    Spoon the spinach artichoke mixture evenly onto each shucked oyster in the cast-iron skillet.

    Topping with Cheese

    Sprinkle the remaining mozzarella and Parmesan cheeses over the filled oysters.

    Preheat the oven to 400°F (200°C). Bake the oysters in the preheated oven for about 10-15 minutes or until the cheese is melted and bubbly.

    Remove the skillet from the oven and let cool slightly before serving. Enjoy your half-baked oysters hot!
