Marinade Preparation

    Prepare the Marinade

    In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, cayenne pepper, paprika, salt, black pepper, and chopped parsley until well combined.

    Marinate the Shrimp

    Place the shrimp in a resealable plastic bag or a shallow dish. Pour the marinade over the shrimp, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, allowing the flavors to meld.

Grilling and Serving

    Preheat the Grill

    Preheat your grill to medium-high heat. If using skewers, soak them in water for about 30 minutes to prevent burning.

    Grill the Shrimp

    Remove the shrimp from the marinade and thread them onto the skewers (if using). Place the shrimp on the hot grill and cook for 2-3 minutes on each side, or until they are opaque and have nice grill marks.

    Prepare the Salad

    While the shrimp are grilling, in a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar, and toss gently to combine.
