    Prepare the Mashed Potatoes

    Peel and dice the potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add goat cheese, chopped scallions, butter, salt, and pepper to the drained potatoes. Mash until creamy and well combined. Set aside and keep warm.

    Cook the Wagyu Steak

    Form the ground wagyu into a patty, season with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat. Cook the patty for about 4-5 minutes on each side or until desired doneness. Remove from skillet and keep warm.

    Sauté the Vegetables

    In the same skillet, add chopped onions and bell peppers. Sauté over medium heat until softened and slightly caramelized, about 5-7 minutes. Remove from heat.

    Make the Brown Gravy

    In the skillet, add flour and stir to combine with the drippings. Gradually whisk in beef broth and soy sauce. Bring to a simmer and cook until thickened, about 5-7 minutes. Season with salt and pepper to taste.

    Assemble the Dish

    On a plate, serve a generous scoop of scallion mashed potatoes, topped with the wagyu chop steak. Spoon the sautéed vegetables over the steak and finish with brown gravy.
