    Cook the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender. Remove from heat and let sit for 5 minutes before fluffing with a fork.

    Prepare the Pineapple

    Cut the pineapple in half lengthwise and carefully scoop out the flesh, leaving a sturdy shell. Chop the pineapple flesh into small pieces and set aside.

Cooking

    Stir-Fry the Ingredients

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sauté until fragrant. Add diced chicken and cook until no longer pink, about 5-7 minutes.

    Add Shrimp and Vegetables

    Add shrimp, carrots, and frozen peas to the skillet. Cook for an additional 3-4 minutes until the shrimp are pink and the vegetables are tender.

    Combine Rice and Seasonings

    Stir in the cooked rice and chopped pineapple. Add soy sauce, sesame oil, salt, and black pepper. Mix well and cook for another 2-3 minutes until everything is heated through.

    Spoon the pineapple fried rice into the pineapple halves, garnish with chopped green onions, and serve immediately.
