Tortilla Chips

Method

Prepare the Kalua Pork

    Preheat your oven to 300°F (150°C).

    Rub the pork shoulder with Hawaiian sea salt and drizzle with liquid smoke.

    Step 3

    Wrap the pork in banana leaves or aluminum foil and place it in a roasting pan.

    Roast for about 6 hours, or until the pork is tender and easily pulls apart.

    Once cooked, shred the pork with two forks and set aside.

Make the Tortilla Chips

    Heat the vegetable oil in a deep skillet or fryer over medium-high heat.

    Cut the corn tortillas into triangles.

    Fry the tortilla triangles in the hot oil until golden and crispy, about 2-3 minutes.

    Remove from oil and drain on paper towels. Season with salt.

Assemble the Nachos

    Preheat your oven to 350°F (175°C).

    On a large baking sheet, layer the fried tortilla chips, shredded Kalua pork, and shredded cheese.

    Add jalapenos on top of the cheese.

    Bake in the preheated oven for about 10 minutes, or until the cheese is melted.

Prepare the Crema

    In a small bowl, mix together sour cream, lime juice, and garlic powder until smooth.

Serve

    Remove nachos from the oven, drizzle with the crema, and garnish with chopped green onions.
