    Prepare the Shrimp

    In a bowl, combine the flour, salt, black pepper, garlic powder, and cayenne pepper. Set aside. In another bowl, place the beaten egg. In a third bowl, combine the shredded coconut and panko breadcrumbs.

    Coat the Shrimp

    Dredge each shrimp in the flour mixture, shaking off excess. Dip in the egg, then coat with the coconut and panko mixture, pressing gently to adhere.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread; it should sizzle and brown quickly.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Serve the crispy coconut shrimp hot with sweet chili sauce for dipping.
