Prepare the Potatoes
Peel and cut the potatoes into thick strips. Rinse in cold water and pat dry with paper towels.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Prepare the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, allowing any excess to drip off.

Fry the Fish
In the same hot oil, carefully add the battered fish fillets. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy fish with the fries, tartar sauce, and lemon wedges on the side.
