Pour in the vegetable stock, add salt, black pepper, and smoked paprika. Bring to a boil, then reduce heat and let simmer for 15 minutes until the potatoes are tender.
4. Add Corn and Cream
Stir in the drained corn and heavy cream. Continue to simmer for another 5 minutes.
5. Add Seafood and Herbs
Gently fold in the sustainable seafood mix, chopped thyme, and parsley. Cook for another 5 minutes until seafood is cooked through.
