Preparation of Ahi Tuna

Preparing the Tuna
Start by ensuring your Ahi tuna is sushi grade and fresh. Rinse it under cold water and pat dry with paper towels.

Slicing the Tuna
Using a sharp knife, slice the tuna into thin, even strips approximately 1/4 inch thick. Set aside.
Making the Sushi Rice

Cooking the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook it according to the package instructions, usually using 1 cup of rice to 1.5 cups of water.

Seasoning the Rice
Once cooked, transfer the rice to a bowl. Mix together rice vinegar, sugar, and salt, then gently fold this mixture into the warm rice. Allow it to cool.
Assembling the Sushi

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat or a clean surface. With wet hands, spread a thin layer of sushi rice over the nori, leaving about an inch on the top edge.

Place a few strips of sliced Ahi tuna in the center of the rice-covered nori. Drizzle with sesame oil and lime juice, then add green onions and black sesame seeds.

Starting from the edge closest to you, roll the sushi tightly away from you, using the mat to help. Continue rolling until you reach the bare edge of the nori.

Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
