Preparation
Prepare the Marinade
In a bowl, combine olive oil, soy sauce, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt. Mix well until the sugar is dissolved.
Marinate the Pork Chops
Place the pork chops in a resealable plastic bag or shallow dish. Pour the marinade over the pork chops, making sure they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for more flavor.
Smoking
Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before using them. This will help create smoke and prevent them from burning too quickly.
Preheat the Smoker
Preheat your smoker according to the manufacturer's instructions to a temperature of 225°F (107°C).
Add Wood Chips
Drain the wood chips and add them to the smoker box or directly onto the coals if using a charcoal grill.
Smoke the Pork Chops
Remove the pork chops from the marinade and let any excess drip off. Place the pork chops in the smoker and close the lid. Smoke for about 1 to 1.5 hours or until the internal temperature reaches 145°F (63°C).
