Prepare the Mahi Mahi
Rinse the Mahi Mahi fillets under cold water and pat them dry with paper towels.

Season the Fish
Rub the Cajun seasoning, salt, and black pepper evenly over both sides of the fillets.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Fish
Add the seasoned Mahi Mahi fillets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and set aside.

Add Garlic
Stir in the minced garlic and cook for another minute until fragrant.

Add Liquid Ingredients
Pour in the chicken broth and diced tomatoes. Stir well to combine.

Season the Sauce
Add Worcestershire sauce, hot sauce, thyme, paprika, salt, and black pepper. Stir to mix everything together.

Simmer the Sauce
Allow the sauce to simmer for about 10-15 minutes on low heat, stirring occasionally. Adjust seasoning to taste.
