Main Ingredients

Method

Preparation

1

Prepare the Chicken

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

2

Chop Vegetables

Slice the bell pepper, carrot, and separate the broccoli florets.

Cooking

3

Sauté Chicken

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the seasoned chicken pieces and cook until browned, about 5-7 minutes.

4

Add Curry Paste

Stir in the Thai red curry paste and cook for an additional 2 minutes, mixing well to coat the chicken.

5

Add Coconut Milk and Vegetables

Pour in the coconut milk and add the sliced bell pepper, broccoli florets, and sliced carrot. Stir to combine.

6

Season the Mixture

Add the fish sauce, brown sugar, and lime juice to the skillet. Stir and bring the mixture to a simmer.

7

Simmer

Reduce heat to medium-low and let the mixture simmer for about 10-15 minutes until the vegetables are tender and the chicken is cooked through.

8

Add Fresh Basil

Just before serving, stir in the fresh basil leaves and adjust salt and black pepper to taste.
