Preparation
Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
Chop Vegetables
Slice the bell pepper, carrot, and separate the broccoli florets.
Cooking
Sauté Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the seasoned chicken pieces and cook until browned, about 5-7 minutes.
Add Curry Paste
Stir in the Thai red curry paste and cook for an additional 2 minutes, mixing well to coat the chicken.
Add Coconut Milk and Vegetables
