    In a small bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice until well combined.

    Marinate the Chops

    Place the bone-in prime rib chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking

    Preheat the Grill or Oven

    Preheat your grill to medium-high heat or your oven to 450°F (230°C).

    Remove the chops from the marinade and let them come to room temperature for about 30 minutes. If grilling, place the chops on the grill and cook for about 6-7 minutes per side for medium-rare. If using an oven, place the chops on a baking sheet and roast for about 15-20 minutes, flipping halfway through, until they reach an internal temperature of 130°F (54°C) for medium-rare.
