Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder, tapping out the excess.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

  3. 3

    Mix Dry Ingredients

In a medium bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, and salt until well combined.

  4. 4

    Whisk Eggs and Vanilla

In a large mixing bowl, add the eggs and vanilla extract. Whisk until the mixture is light and frothy.

  5. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir until combined. Gradually fold in the dry ingredients until just combined; do not overmix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  8. 8

    Cool and Serve

Remove from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, letting the cake fall out. Serve immediately with optional toppings.
