Method

Preparing the Brisket

    Season the Brisket

    In a bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture evenly over the smoked brisket and set aside.

    Heat and Shred the Brisket

    In a skillet over medium heat, warm the smoked brisket for about 5 minutes until heated through. Remove from heat and shred the brisket with two forks. Set aside.

Making the Cheese Sauce

    Melt Butter and Make Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until golden brown.

    Add Milk and Cheese

    Gradually whisk in the milk, stirring constantly until the mixture thickens. Reduce heat to low and add the shredded cheddar cheese, jalapeño juice, and hot sauce. Stir until the cheese is melted and smooth.

Assembling the Nachos

    Layer the Nachos

    On a large serving platter or baking sheet, spread out a layer of tortilla chips. Top with half of the shredded brisket, followed by half of the cheese sauce.

    Repeat the layering with the remaining brisket and cheese sauce. Top with sliced jalapeños and pico de gallo.
